For busy moms who are done with the 5 PM scramble

You didn't fail at freezer meals. Your plan left you the 5 PM job.

The Fall & Winter Freezer Plan open on a tablet beside flat labeled freezer bags and a pot of chili

The Fall & Winter Freezer Plan: two prep days, 20 meals, 40 weeknight dinners for a family of four. Every bag has three ways to cook, one from frozen, so at 5 PM the only job left is heat.

  • Dinner decided before Monday. One shopping list by aisle, one afternoon, ten meals into twenty bags.
  • Nothing left at 5 PM but heat. The chopping, browning and measuring happened on prep day. Tonight's minutes of work are printed on every card.
  • Forgot to thaw? Dinner still happens. Every bag has a way that starts from frozen, in the pressure cooker or the oven.

“I might as well just prep when I want to cook it”

The freezer was full. You still ordered pizza.

  • 18,884comments read under freezer-meal recipes
  • 32%of them were questions, the top one about the slow cooker
  • 1 in 5of the 1 and 2 star reviews said the meals weren't really ready
“Most had just as much work the day of cooking as if you'd done the whole thing in one day.”

You did the Sunday prep. Twenty bags, sore feet, a freezer you were proud of. Then Tuesday came. The chicken was still a brick at 5 PM, the recipe said “cook the rice and stir in the cream,” the kids were hungry, and the pizza place picked up on the second ring.

We read 18,884 comments under freezer-meal recipes. Almost one in three was a question, and the most common ones weren't about taste. They were about the evening: how long, on which setting, and do I have to thaw it first. Under the books, one review in five said the meals weren't really ready.

That isn't you failing at freezer meals. It's the plan. Most make-ahead plans prep half a dinner and leave the rest for the hour you have least: deciding what to thaw, remembering to thaw it, finishing the recipe, figuring out the cooker. We call it the 5 PM job. This plan is written to take it off your evening.

More recipes won't fix it. Every recipe is one more decision at 5 PM.

The dump-dinner book.

Quick because it opens cans of soup. And on half the pages there's still cooking to do the night you serve it.

Free recipes online.

Twenty recipes, twenty different times and settings, no shopping list that adds up, and nobody telling you whether to thaw first.

Takeout and delivery.

It solves tonight. Then you pay for it again tomorrow, and the night after.

What works is a plan that starts at 5 PM and works backward. That's how every card here is built.

The Done-Ahead method

Every dinner is done ahead. Tonight, the only job left is heat.

A meal is done ahead when nothing is left for dinnertime but heating it. Every card in the plan is written backward from that moment.

A real meal card from the plan, Beef and Bean Chili: the prep day steps, the day before, and three ways to cook at 5 PM
  1. Prep day. The chopping, browning, measuring and deciding happen once, in one afternoon, into flat labeled bags.
  2. The day before. Slow cooker tomorrow? Move one bag to the fridge the day before. The card and the label remind you, so your memory doesn't have to.
  3. 5 PM. Three ways to cook, for the cooker you own, with the minutes of real work printed on the card. One always starts from frozen.

And for the night you forgot:

  • Forgot to thaw? The pressure cooker or the oven takes the bag from the freezer to the table. Dinner still happens.

The deciding happens on prep day too. At 5 PM you don't choose a recipe, you pick a bag. That's the part that used to sink the plan.

What's inside

Everything for 40 weeknight dinners, in one plan.

  1. 20 meals, 40 dinners. Chili, honey garlic chicken, beef stew, pulled pork, butter chicken, carnitas, lasagna soup and more. Home cooking for a family of four, two bags of each.
  2. Two prep days, ready to go. Prep Day A and Prep Day B: a shopping list by aisle that adds up from the cards, the bags you need, and the afternoon in order, step by step.
  3. Build your own prep day. Not every family likes every dinner. Every card has its own list for two bags, so you pick any ten and the lists simply add up.
  4. Swaps for your family. A mild version for picky eaters on every card, plus dairy-free and gluten-free swaps where they work.
  5. Five-minute sides. What goes next to dinner while it heats, with nothing to plan.
  6. The freezer pages. How the bags go, where twenty of them fit, feeding 2 or 6, and food safety on one page: the USDA rules every card follows.

A print edition for US Letter paper, 57 pages, and a phone edition with the shopping lists in your pocket.

Fill the rest of the freezer.

  3. Heat at 5 PM.

Written to the USDA rules, so the evening has no guesswork.

Every card follows the freezing, thawing and cooking guidance of the USDA Food Safety and Inspection Service. The slow cooker starts from a bag thawed in the fridge, the from-frozen ways take the extra time USDA calls for, and every card names the internal temperature to check. Pressure cooker times follow the manufacturers' published charts.

The rules sit on one page at the back of the plan, with the source, so you never have to look them up.

Questions

Before you buy.

What if my kids won't eat it?

Every card has a mild version and a note on serving it to a picky eater, and the dinners are home cooking kids already know: chili, meatballs, pulled pork, tacos, honey garlic chicken. Not sure about one? Build your own prep day and leave it out.

Do I have to remember to thaw?

Only for the slow cooker, and the card and the label remind you the day before. Forgot? Every dinner has a way that starts from frozen, in the pressure cooker or the oven.

Is this canned-soup cooking?

No cream-of soups and no seasoning packets. Canned tomatoes and beans and boxed broth, yes: real ingredients from any supermarket, with every spice measured on the card.

Can't I find freezer recipes free online?

You can find recipes. What you won't find free is the plan: one shopping list that adds up, the afternoon in order, three ways to cook every bag with the times, and the day-before step that makes it work.

I don't have much freezer space.

The bags freeze flat, about an inch thick, then stand up like files: twenty of them take about 20 inches of one shelf. Tight on space? Do Prep Day A now and Prep Day B in three weeks.

I don't have a slow cooker, or a pressure cooker.

You don't need both. Every dinner has three ways to cook, and at least one of them is the oven or the stovetop.

How many people does it feed?

Each meal makes two bags of four servings: two dinners for a family of four. Cooking for two? Fill four smaller bags. For six, a page tells you what to change.

What about allergies?

Every card lists what the dinner contains, with dairy-free and gluten-free swaps where they work. Always check the labels of what you buy, since brands differ. More on the disclaimer page.

Is this a subscription?

No. One payment, no trial, nothing to cancel.

Is it a printed book?

It's a PDF, nothing ships. You get a print edition for US Letter paper and a phone edition. Download links arrive on the page after payment and by email.

What if it isn't for me?

Email us within 7 days and we refund you in full. Full policy on the refund page.
